Pizza Schmizza

FABS Pizza (Fig Avocado Bacon Spinach)

Pizza crust

¼ cup butter

¼ cup flour

1 cup milk

1 tsp salt

½ cup balsamic fig jam

1 tbsp olive oil

½ onion, chopped

1 tbsp minced garlic

½ lb bacon, cooked and chopped

¾ cup shredded smoked provolone cheese

1 cup fresh baby spinach

2 avocados, cut into slices


1. Make and shape the pizza crust according to the recipe directions.  Brush the crust with olive oil and bake at 375 degrees for 20 minutes.

2. Melt the butter in a small saucepan over medium heat, then stir in the flour until smooth to make a roux.  Cook for two minutes, stirring constantly.  Add the milk and salt and stir briskly to mix.  Continue cooking over medium heat until the mixture thickens, about 3 minutes.  Remove from heat and stir in the fig jam until it is evenly distributed.

3. In a medium frying pan, heat the oil over medium-high heat.  Add the chopped onions and cook for about 5 minutes or until soft, stirring frequently.  Add the garlic and cook for 1 minute, stirring constantly to avoid burning the garlic.  Remove from heat and transfer to a separate bowl to stop the cooking process.

4. Evenly spread the sauce from Step 2 over the baked pizza crust.  Top with the onion-garlic mixture, bacon, spinach and cheese.  Return to the hot oven for approximately 2 minutes, or just long enough to partially melt the cheese.  Remove from the oven and evenly distribute the avocado slices over the top of the pizza.  Briefly marvel at the beauty of your creation, take photos for later posting online as desired, then cut and serve warm.
